Coffee roasting is one of the most important factor affecting the taste of the coffee. Before roasting, green coffee beans are soft, with a fresh “grassy” smell and little or no taste. The coffee roasting process transforms these raw beans into the distinctively aromatic, flavorful, crunchy beans that we recognize as coffee.
Coffee grown from different countries and different mountains will taste differently even when roasted to the same level. The age of the coffee, the processing method, the grind, and the brewing method will also affect the taste but the roast level provides a rough guide to the taste you can expect.
We generally categorize the most common coffee roasts from : light, light-medium, medium, medium-dark to dark roast. Roast level preferences are subjective, depending where you live. Most Europeans favour darker roast. Americans and Asians tend to have a fairly equal liking of dark, medium and light roast. However, in recent years, lighter roast are preferrred as they offer a most distinctive taste. Artisabn coffee drinkers tend to prefer lighter roasted Arabica Coffee beans seeking for acidity, flavour and body of coffee.
